咖啡马芬 Coffee Muffin

材料
全蛋.... 217公克 (4粒)
糖粉.... 160公克
盐.... 3公克
奶油.... 150公克
牛奶.... 40公克
即溶咖啡... 1包
面粉.... 250公克
泡打粉.... 8公克

作法
1 蛋放入搅拌缸中,加入糖粉和盐以慢速搅拌均勻。
2 將溶化的奶油加入作法1中,拌勻至完全吸收後加入牛奶拌勻。
3 將即溶咖啡, 面粉和泡打粉一起加入作法2中,以慢速搅拌成无干粉状的面糊。
4 用汤匙倒入纸杯, 大概3/4满,放入预热好的烤箱以170℃烘烤约約25分钟。

Ingredient
Egg.... 217 grams (4)
Icing Sugar.... 160 grams
Salt.... 3 grams
Milk.... 40 grams
Instant Coffee... 1 stick
Flour.... 250 grams
Baking Powder.... 8 grams

Method
1 Put eggs into the mixing tank, add icing sugar and salt, then stir slowly.
2 Add melted butter to practice 1,mix until completely absorbed, then add in the milk and mix well
3 Instant Coffee, flour and baking powder add into method 2, stir slowly
4 Spoon into muffin cup until 3/4, put into the preheated oven bake about 25 minutes with 170 ℃

咖啡海绵蛋糕 Coffee Spounge Cake

材料:
低粉/自发面粉 150克
牛奶35克
油30克
蛋4只
糖130克
3合一即溶咖啡
盐一小撮

做法:
1. 先筛低粉/自发面粉2至3遍
2. 鸡蛋放入糖和盐用打蛋器打至颜色变乳白, 体积比原来的蛋糖大3倍左右, 用打蛋器可以写出字就算好了,这时可以倒入筛好的低粉,轻轻的拌匀
3. 加入牛奶,油和3合一即溶咖啡搅拌均匀,蛋糕糊就做好了
4. 预热烤箱180度,将蛋糕糊倒入八寸蛋糕模中
5. 倒数第二层180度烤35分钟
6. 取出后将蛋糕立即翻过来,放在蛋糕架上,使之冷透

Ingredients:
Flour / self-raising flour 150 g
Milk 35 g
Cooking Oil 30 grams
Egg 4
Sugar 130 g
3in1 Instant Premix Coffee
A handful of salt

Steps:
1. Filter flour / self-raising flour 2 to 3 times
2. Eggs, sugar and salt mixed will until the color becomes white, size larger than the original three times, even if the word can be written well, then pour the
flour / self-raising flour, mix gently
3. Add milk
, oil and 3in1 Instant Premix Coffee, mix well
4. Preheat oven 180 degrees,
pour into the eight-inch cake mold
5. Put into t
he penultimate layer, bake 35 minutes with of 180 degrees
6. Remove the cake
immediately and turn over on cake rack so that the cold through

香蕉马芬 Banana Muffin

- 500g Banana Muffin Mix
- 4 Eggs
- 135ml cooking oil / butter (melted)
- 300g bananas

1. Mix all ingredients
2. Spoon into muffin until 3/4
3. Bake with 180 Degree Celsious 25 minutes

- 135ml 食油或熔化牛油
- 300克香蕉

1. 加入所有材料搅拌均匀
2. 用汤匙倒入纸杯, 大概3/4满
3. 180度上下火烤25分钟

清蒸鸡蛋糕 Steamed Cake


材料:
鸡蛋 3粒
幼糖 120克
面粉 120克
香草精 几滴

做法:
1。把鸡蛋,幼糖和香草精打发成乳白色浓稠松发 。
(大约之前的三倍份量, 面糊写成八字不会马上消失)
2。加入面粉轻轻的搅拌, 倒入7寸的模 。
3。放入预备好的蒸炉, 用大火蒸大约35分钟左右至熟。

Ingredient:
3 Egg
120g Sugar
120g Flour
Few drop Vanilla Essence

Steps:
1. Mix egg, sugar & vanilla essence until become cream white & thickness three times before mix
2. Add flour and mix gently, stir into the 7-inch model
3. Put into the prepared steamer, steam for about 35 minutes until cooked

椰子包 Coconut Pau

500g Pau Flour
6g Instant Yeast
100g Sugar
50g Shorterning / Corn-oil

Coconut filling:
1 Cook 500g of freshly grated coconut 300g of brown sugar
2 Cool filling before use

Method:
1 Mix Pau Flour and instant yeast and dissolve the sugar i water
2 Mix all the ingredients in a mixing bowl, then knead the dough with hand (for 10-15 minutes)
3 Scale the dough at 40g each. Round it and leave it to rest for 10 minutes
4 Flatten the dough and place the coconut filling in the centre of the place each dough on a small piece of square grease-proof papre
5 Cover the pau dough with a piece of clean plastic sheet and allow it to rise (proof) for 35-40 minutes
6 Place all dough pieces in a steaming rack that is lined with a piece of wet cloth. Steam the dough pieces for 15 minutes over the high heat

Note: 6g Instant Yeast can be substituted with 15g fresh yeast

椰子馅料:
1 将 500克新鲜椰丝和 300克椰糖一起煮
2 冷却待用

制作方法:
1 将包粉和酵母混合均匀, 将糖溶于水中
2 将所有材料放入搅拌缸内, 搅拌成均匀光滑的面团
3 将面团分割, 每粒大概40克, 滚圆, 松弛10分钟
4 将面团压成薄片, 把椰丝放在中间, 包起来放在纸上
5 将面团盖上塑胶纸, 让面团发酵35-40分钟
6 将包子放入蒸笼, 周围包上湿布, 用高温蒸15分钟

注意: 6克自发酵母等于15克湿酵母

- 135ml cooking oil / butter (melted)

1. Mix all ingredients
2. Spoon into muffin until 3/4
3. Bake with 109Degree Celsious 25 minutes

巧克力马芬

- 500克 Muffin Mix
- 4粒鸡蛋
- 130ml 水
- 135ml 食油或熔化牛油

1. 加入所有材料搅拌均匀
2. 用汤匙倒入纸杯, 大概3/4满
3. 190度上下火烤25分钟
